Hawaiian Dave the Firefighter/Medic Pickled Mango Recipe

Ingredients:

  • 6-8 Green (unripe) Organic Mangoes (~ 4 pounds)

  • 2 1/2 cups Sugar or Agave Nectar

  • 2 cups water

  • 1/2 cup Organic Rice Vinegar

  • 1/2 cup Organic Apple Cider Vinegar

  • 3 light tablespoons of Hawaiian Sea Salt

Directions 

  1. Peel then slice mangoes into thin pieces and put into a pot that fits.

  2. Bring together in a separate pot the sugar, water, & salt to a boil then turn down and stir a little until clear.

  3. When it begins to cool just ever so slightly you may add the vinegar then let cool until near room temp.

  4. Pour mixture over and in the pot or even in a container/zip lock bags/jars with the cut mango.

  5. Seal up, put in the refrigerator, and let those mangoes soak for at least a full day or when desired taste is achieved.

  6. Enjoy however you please on top of anything or on their own. :)

Bonus: Add a small handful of sweet Li Hing Mui plums or even Goji berries to the mix. And wuhlah! 😋
